Healthy, Hearty Apple Muffins

Great breakfast muffins that are good for you too.
Ingredients
1 Granny Smith apple
1/3 cup chopped walnuts, toasted
1 cup all-purpose flour
3/4 cup whole wheat flour
2 tablspoons ground flax seed
2 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspooon cinnamon
2 large eggs, room temperature
3/4 cup brown sugar
1 cup buttermilk, room temperature
1/3 cup vegetable oil (walnut preferred)
12 half walnuts (optional)
Coarse sugar (optional)
Directions
- Preheat the oven to 400 degrees. Grease or spray 12-cup standard muffin tin.
- Peel, core and coarsely chop the apple, set aside.
- Whisk together the flours, flax seed, baking soda, salt and cinnamon in a medium bowl.
- Add the apples and walnuts, stir to mix.
- In a small bow, whisk together the eggs and brown sugar, add the buttermilk and oil, then whisk until well mixed.
- Gently mix the buttermilk mixture into the flour mixture until just combined. Do not overmix. It should be lumpy.
- Divide batter evenly into twelve muffin cups. Add a half walnut to the top and sprinkle with coarse sugar (optional).
- Bake at 400 degrees for 16-18 minutes.
- Let muffins cool for about 5 minutes before turning onto a wire rack. These muffins will keep for 2 days at room tempurature. 3-4 days in the refrigerator.
